I hope you’ve all had a nice break over this June bank holiday weekend and stayed safe on the roads. I had originally planned to take part in the mini marathon in aid of Cystic Fibrosis as part of Team Gary Dillon, but unfortunately got a cold (in June!!) and didn’t feel well enough to run.
Every cloud has its silver lining and mine came in the form of an escape to Castle Dargan. It’s less than 10 minutes drive from Sligo town, so it just shows that you don’t have to travel too far to enjoy a luxury retreat.
The grounds are spectacular. The service is refreshingly great. John was our server, full of chat and friendly vibes. It’s peaceful and spacious and what I particularly loved was how I didn’t feel rushed. Two hours passed – it was that relaxing a setting.
Raspberry cheese cake was the dessert of the day but the chocolate brownie, heated with ice-cream and cream is my confirmed favourite. Ask for some home-made shortbread biscuits too, if you’re feeling indulgent. I’d recommend the ciabatta, goats cheese salad and Castle Dargan club sandwich. The seafood chowder was the only dish I disliked.
We enjoyed the hotel so much that we went back for more! Afternoon tea is a lovely way to catch up with friends or spend quality time with your mum or loved ones. It’s surprisingly very affordable at €19.95 between two! We added some fizz to our afternoon with chilled prosecco. Check out that view!
I’ll definitely be returning for some down time, hopefully to check out the Icon Spa next time. It’s been too long. See more photos in gallery below.
